Conchitas Con Pollo Sopa (Shells with Chicken Soup)

Ingredients

  • 2 lbs Chicken Drummettes
  • 8 oz Pasta Shells
  • 2 cups Frozen Corn
  • 2 medium Green Squash evenly chopped
  • 1/2 medium Yellow Onion
  • 1 tbsp Vegetable oil or Manteca (Lard)
  • 8 oz Tomato Sauce
  • 4 cups Water
  • 1 tsp Ground Cumin
  • 2 tsp Garlic Powder or 3-4 minced fresh garlic
  • 2 tsp Salt plus a bit for the onion
  • 1 handful Chopped Cilantro rough chok

Heat a large casserole skillet (frying pan) over medium high heat, add onion and squash. Season with a couple of dashes of salt or garlic salt. Combine water,tomato sauce, salt, cumin and garlic, set aside. After about 2 to 3 minutes, when onion becomes opaque, add water mixture. Then add drummettes. Cover and simmer until it reaches a boil. Add frozen corn and pasta. Lower heat a bit, cover and cook for 10 more minutes.
Finally add fresh chopped cilantro and stir in. Yummy!! OPTIONS: You can add 4 slices of American cheese to give it a yummy creaminess. You can omit chicken and still make a yummy vegetarian dish.
